🔥 Understanding Cooking Times
Weight Matters: Cooking time increases with weight. Double the weight doesn't necessarily double the time - use per-pound calculations.
Thickness vs Weight: A thick, small piece takes longer per pound than a thin, large piece of the same weight.
Starting Temperature: Room temperature meat cooks faster than cold meat straight from the fridge.
Resting Time: Always let meat rest after cooking - internal temperature will continue to rise 5-10°F.
🌡️ Food Safety Guidelines
- Use a meat thermometer: The only reliable way to ensure food safety
- Insert properly: Place thermometer in the thickest part, avoiding bone and fat
- Clean between uses: Sanitise thermometer between different meats
- When in doubt: Cook longer rather than risk undercooked meat
- Ground meats: Always cook to higher temperatures than whole cuts
